Both my kids are tofu-lovers, so I try to have it on nights where we're super busy. I always use soft tofu, not firm, so be careful when stirring otherwise you'll get mashed-up tofu. I also try to use tofu up within a day or two of buying it because I cannot stand the smell of not-so-fresh tofu (even though it's well before the expiration date). I have been known to throw out tofu upon opening because of the smell! Fresh tofu should have an almost vanilla-y smell. Okay, enough of my rantings on tofu. Here's my easy tofu dish.
INGREDIENTS Tofu cut into 1/2 inch cubes or 1 X2 inch slices Fresh or frozen green peas Vegetable broth (optional) Soy sauce Hoisin sauce (optional) Black pepper Cornstarch or quick cooking tapioca starch to thicken Sesame oil Cooked rice
