INGREDIENTS
Sauce:
1 diced medium onion
1 small diced green pepper
1 can (4 oz) chopped green chilies
1 can (15 oz) tomato sauce
2 tsp chili powder
1 tsp sugar
1/2 tsp garlic powder
1 cup (4 oz) shredded cheddar cheese
FIlling:
1 lb hamburger
2 cups shredded monteray jack cheese
1 can (2 1/4 oz) sliced black olives
2 tsp parsley flakes
1/2 tsp garlic powder
1/2 tsp salt
1/8 black pepper
PREPARATION:
- Cook and drain the hamburger, then mix together the rest of the filling
ingredients and set aside.
- To prepare the sauce, in a skillet saute onion and pepper until tender.
- Add chilies, tomato sauce, chili powder, sugar and garlic power and
mix well.
- To assemble the enchiladas, place some of the beef mixture on a tortilla,
roll it up and place seam side down in a 13x9x2 baking pan.
- Pour the sauce over the assembled enchiladas.
- Cover with foil and bake at 350 degrees for 30 min.
- Sprinkle with cheddar cheese and bake uncovered 10 min. Serve with
salad and fresh baked bread.
