Enchiladas 2 from greenlane



1 diced medium onion

1 small diced green pepper

1 can (4 oz) chopped green chilies

1 can (15 oz) tomato sauce

2 tsp chili powder

1 tsp sugar

1/2 tsp garlic powder

1 cup (4 oz) shredded cheddar cheese



1 lb hamburger

2 cups shredded monteray jack cheese

1 can (2 1/4 oz) sliced black olives

2 tsp parsley flakes

1/2 tsp garlic powder

1/2 tsp salt

1/8 black pepper


  1. Cook and drain the hamburger, then mix together the rest of the filling ingredients and set aside.
  2. To prepare the sauce, in a skillet saute onion and pepper until tender.
  3. Add chilies, tomato sauce, chili powder, sugar and garlic power and mix well.
  4. To assemble the enchiladas, place some of the beef mixture on a tortilla, roll it up and place seam side down in a 13x9x2 baking pan.
  5. Pour the sauce over the assembled enchiladas.
  6. Cover with foil and bake at 350 degrees for 30 min.
  7. Sprinkle with cheddar cheese and bake uncovered 10 min. Serve with salad and fresh baked bread.
