Greek Rice Pilaf  from sarahjoy
Adapted from Moosewood Cooks at Home
Yields approximately 8 servings.
 

INGREDIENTS:

4 cups cooked rice

1 onion, chopped

1-2 cloves of garlic minced

3 Tbsp lemon juice

1-2 tsp dried mint (to taste)

1 14 oz can chick peas, drained

1 14 oz can chopped tomatoes

4 cups fresh spinach leaves,  coarsely chopped

1 Tbsp dill

1/2 cup feta cheese crumbled 

PREPARATION:

  1. Cook onion in large frying pan over medium heat until translucent.
  2. Add garlic cook a minute or two.
  3. Add lemon juice, mint, chick peas and tomatoes, cook 5 minutes.
  4. Add rice, spinach and dill, cook 5 minutes., 
  5. Sprinkle with feta and serve.
